Craving Candy? Try These 3 C Clusters

Sometimes you just have to have a nibble. A little something, what the Germans call a Sussigkeit, a little sweet thing. Just a bite or two, to wake up your taste buds and brighten your day.


My 3C Clusters have become real favorites at work. Along with my Super-Reliable Take-Them-To-Work Brownies, people ask for them when we plan pot lucks and celebrations.


And they are so simple to make! Watch a video of me making them on Instagram.


3 C Clusters: Cashews, Coconut and Chopped Fruit


150 grams dark chocolate

1 tsp coconut oil

1/2 cup finely chopped dried cranberries, or your favorite dried fruit

1/2 cup coarsely chopped cashews

1/2 cup finely shredded coconut, toasted or untoasted


Mix the fruit, nuts and coconut together and set aside.


Melt the chocolate slowly over a double boiler. When it's about half-melted, stir in the coconut oil. When it's completely melted, remove from heat and add the fruit and nut mix. Stir until all the fruit, nuts and coconut are coated with chocolate and the mix holds together, adding a bit more coconut if needed.


Drop by spoonfuls onto a cookie sheet covered with parchment paper, or into small muffin cups. Refrigerate about 45 minutes, until the chocolate hardens. Then enjoy!


In theory they last about a week in the refrigerator and longer if frozen, but they never make that long in my house. I do love my sweets!
