I admit, I don't eat a normal breakfast. I prefer starting my day the way most people finish it: meat, starch, and vegetables. Leftover pot roast? Love it! Reheated stir-fry? Send it my way!
But sometimes you just need pancakes. And I'm no exception. Of course, mine have to be Easy, Tasty, Gluten Free too. That's exactly what these are.
One batch makes about 6 pancakes, as you can see. You can easily double or triple the recipe.
Easy, Tasty Gluten-Free Pancakes
Ingredients
1 cup rice flour
1 Tablespoon oil
1 teaspoon baking powder
1 Tablespoon sugar
1/3 cup milk (whole or skim)
Chopped berries or chocolate, cinnamon sugar, or whatever you like in your pancakes
Mix the first 5 ingredients until you have a smooth, loose batter that runs off the spoon.
Heat a frying pan or griddle until hot enough to make a drop of water sizzle. Now drop the batter by large spoonfuls onto the hot griddle.
Sprinkle your additions onto the top of the pancake. Flip it when the bubbles appear in the whole pancake, not just the edges. It will need less than a minute on the second side until done.
Repeat until the batter is gone! Enjoy with butter, syrup, cinnamon sugar, or whipped cream.
