Emergency Gluten-Free Nibbles: Almond-Raisin Yummies!



It's a celiac emergency: you need a delicious gluten-free treat now! Don't worry, I've got you covered.


Gluten-free, egg-free, dairy-free, and easily made vegan, these treats are also oven-free. All you really need is a bowl, spoon, and microwave, plus some baking paper or a non-stick cookie sheet. I've even made them in a hotel room.


The Yummies take about 10 minutes to assemble and 45 minutes to chill, making them perfect for last-minute creations for birthday parties and office potlucks. And with just 4 ingredients, they really are no-fail!


Almond-Raisin Yummies


200 grams dark chocolate (vegan if desired)

1 1/2 tsp coconut oil

1 c raisins

1 c sliced almonds


Melt the chocolate and coconut oil in the microwave, then mix in the raisins and nuts. Stir until they are completely coated in chocolate. Add more nuts or raisins if you want to; as long as there is enough chocolate to hold them together, you're doing it correctly.


Drop by spoonfuls onto a cookie sheet covered with parchment paper, or into small muffin cups. Refrigerate for about 45 minutes, until the chocolate hardens. Then enjoy!


So fast, so easy, that you can mix them up before hopping in the shower in the morning; by the time you're dressed, they will be chilled and ready to wrap for transportation - or ready to taste!


In theory, these last a few days in an airtight container. Somehow in my house, they seem to disappear much faster than that. Hmmm, I wonder why?
