Sweet and Chocolatey and Gluten-Free: Chocolate-Marshmallow Brownies

You might have noticed that I love chocolate – gluten-free brownies, cakes, treats, you name it...I love that deep chocolatey taste. And I love it even more with marshmallow. There's something about the gooey sweetness of marshmallows that gives these chocolate brownies an extra kick. And of course they are gluten free and easy!


Marshmallow Brownies

 

Prep: 15 minutes. Bake: 18 minutes. Makes 16 brownies

150 grams butter

3/4 cup sugar

1/4 cup cocoa powder

3 eggs

1 cup rice flour

1/2 cup sweet rice flour

1/2 tsp baking soda

1/2 cup milk

1-2 T marshmallow fluff, any brand, or gluten-free marshmallows

 

Preheat the oven to 350˚F/180˚C


Soften (don’t melt) the butter. Add the sugar and cocoa powder and mix until blended. Add the eggs, flours, baking soda and milk, alternating liquid and dry ingredients. Stop adding liquid when the batter drips off a spoon in small to medium-sized globs.


Pour the batter into a square silicone pan (square is definitely the way to go here; you won't have enough batter for a rectangular brownie pan) and place the pan on a cookie sheet for support.


In a separate bowl, heat the marshmallow fluff in the microwave for about 15 seconds, just to make it a little runny. Working quickly, drizzle the fluff over the batter. Gently mix it through. Don't worry if it stays clumpy, sits on top of the batter or sticks to the spoon or spatula. Just get enough onto or into the pan to satisfy your marshmallow fans. If you're using chopped marshmallows, sprinkle them evenly across the top of the pan.


Bake for 15-18 minutes, until a toothpick in the brownie part comes out clean.

Cool thoroughly before slicing.
